The foundation to every great sauce is born from the Mother sauce. Béchamel, Veloute, Sauce Tomat, Demi Glace and Hollandaise are prepared. We discuss how to flavor and pair with various dishes.

FRESH PASTA

Pasta

Old and New methods for making fresh dough. Ravioli, Paper Della, Gnocchi and Tortellini. We discuss methods of coloring, flavoring and shaping various types of pasta. This is a hands on class and very kid friendly.

Techniques to create miniature masterpieces for cocktail parties and events. Very hands on class preparing multiple crostini and spreads, roulades including pinwheels and sushi rolls, using phyllo dough, crafting miniature deserts.
